 8 chicken thighs
 2 cups corn flakes
 ½ cup breadcrumbs
 ¼ cup freshly grated parmesan
 ½ cup flour
 1 tsp paprika
 1 tsp garlic powder
 1 tsp salt
 1 tsp pepper
 2 eggs

This recipe is very simple and easy. Separate your flour, beaten eggs and the cornflakes/breadcrumbs into 3 different bowls. Combine all seasonings and the parmesan into the bowl with the breadcrumbs and corn flakes. Ensure you crush the corn flakes into smaller pieces. You can use chicken breasts for this recipe if you like as well.

Coat each thigh with flour, then eggs and then the breading. Set aside. Once you have coated all of them, heat a pan with some vegetable or canola oil to fry the thighs. You can also bake them at 400 degrees for 15 minutes max, flipping halfway. I would broil it at the end with some cheese on top for 2 minutes.

If you will fry these, put a generous amount of oil into the pan over medium-high heat and cook each side for 3-4 minutes, until golden brown. They do not take very long to cook at all.

Once complete, I recommend baking with some cheese on top, preferably broiling on high heat for a few minutes. You can eat these with anything - pasta, a fried chicken sandwich, wraps or a traditional chicken parmesan dish with a tomato sauce on top. When we don't feel like making homemade sauce, we use a vodka sauce that can be found at the grocery store in the pasta section. Tastes great with this! Enjoy.
