This simple and clean noodle dish is perfect for meal prep as it can be devoured while it is cold or hot.

Yields1 Serving

Base
 vermicelli noodles
Meat
 ½ lb ground turkey
Vegetables
 1 carrot
 ½ of an onion, diced or sliced
 ½ cup green onions
 ½ cup green pepper, diced
 1 cup mushrooms (optional)
 2 tbsp minced garlic
 1 bunch of pea shoots
Spices
 1 tbsp coriander
 1 tbsp garlic powder
 1 tbsp paprika
 2 tsp salt
 2 tsp pepper
 2 tsp chili flakes
 2 tbsp sesame seeds
Liquids
 1 tbsp sambal chili garlic paste
 2 tbsp soy sauce (optional)
 2 tbsp oyster or teriyaki sauce (optional)

Boil your noodles as per the instructions on the package. Saute the onions in a skillet over medium heat and 2 tbsp of cooking oil. Once fragrant, add in the garlic and spices.

Add in the carrots immediately after adding in the garlic and cook on medium heat for 3-4 mins, until carrots are semi-soft. Add in the green peppers. Mix well and cook for a another minute or so.

Add in your ground meat and break apart. Cook for 5-7 minutes on medium heat.

Once the turkey is cooked, add in more spices if you please. Add in your cooked noodles and mix well.

Add in the pea shoots and the sauces are all optional. You don't have to add those in but I did for added flavour. The meal is clean and healthy without those spices, so avoid them if you are trying to meal prep healthy meals or just eat something cleaner. Enjoy!
