Yields4 Servings

 2 handfuls of spaghettini pasta (image shown below on how to measure uncooked pasta)
 10-12 prawns
 2 small chicken breasts
  cup diced onions
 3 tbsp minced garlic
 1 diced roma tomato
 ¼ cup cremini mushrooms
 ½ lemon
 3 tbsp salted butter (unsalted is fine, just use a little more salt)
 3 tbsp red pepper olive oil (regular is fine)
 1 tsp sea salt
 1 tsp pepper
 1 tbsp garlic powder
 1 tsp chili flakes
 2 tbsp chili oil (for topping, you can leave it out)
 ¼ cup green onions
 ¼ cup parsley
 Romano or Parmigiano cheese

Measure out two spoons of spaghettini pasta. Use this type of spoon to measure it but if you don't have one, just do a rough measurement in your hand. It's okay if it's not accurate! Bring a pot of cold water to a boil and add in salt and oil. Once boiling, add the pasta to water and follow instructions on your box to see the amount of boil time. Once boiled, rinse in a strainer and toss with olive oil. Preserve about 1/4 cup of the pasta water in a bowl.

Before I give you the next direction I just wanted to note that my chicken breasts were already seasoned and frozen, so I cooked them in the oven and just diced them up to add into the pasta when it was almost done. If you are using uncooked chicken, that is totally fine! I will let you know when to add them in below.

Heat a pan over medium-high heat. Add in the butter and oil. Ensure it is hot and then toss in your chicken if it is raw, onions and mushrooms. Mix it until the onions are golden brown. Once you see color in the onions, add in your shrimp, garlic, and seasonings. Make sure your shrimp is devined and cleaned! Turn the heat down to medium. Allow everything to cook for 4-5 minutes on medium heat while stirring it occasionally.

At this point, you can add in the herbs, tomatoes, pasta, lemon juice and stir on LOW heat. Make sure you taste test it. See if it needs anything else. Might be missing some salt or spice. Add it in. If you are okay with spice, use some chilli oil on top! I did and it turned out amazing. Don't forget to garnish it with some more fresh herbs and some Romano or Parmigiano cheese! Enjoy.
