 1 spicy honey sausage
 2 tbsp olive oil
 handful of chopped spinach
 1 roma tomato (diced)

 ¼ cup italian parsley
 ¼ cup fresh grated parmesan
 ½ tsp maldon salt
 ½ tsp pepper
 ½ tbsp chili flakes

1

This recipe serves 2-3 people and I used sausages from Urban Fare. Feel free to use whatever kind you want or even a different base!

2

Boil your pasta. Preserve some pasta water. In the meantime, heat up the oil in a skillet over medium heat.

3

Slice the sausage casing open and take out all the meat from inside of each sausage. Break it apart in the skillet like ground meat and add in the onions as well at the same time.

4

Saute until onions are golden and the sausage is cooked.

5

Once cooked, add in your tomatoes, spinach and seasonings.

6

Cook for a few minutes, until the spinach is wilted and then add in your pasta. Mix well!

7

Add in a little bit of the pasta water, the parmesan and parsley. Mix well and season more if your heart desires! ENJOY!
