A twist on the classic vodka pasta recipe with some sundried tomatoes topped off with some fresh ricotta cheese - you will not be disappointed!

Base
1package of penne pasta
1large yellow onion or 2 small ones
6cloves of garlic
Vodka Sauce
1small can of tomato paste
1cupwhipping cream
½cupvodka
3tbspbutter
1cupsundried tomatoes
1cupparmesan
½cuppasta water
Herbs & Spices
1tspsalt
1tsppepper
2tbsppaprika
2tbspcumin
2tbspgarlic powder
2tbspchili flakes
1tbsporegano
Topping
ricotta cheese
italian parsley
parmesan
lemon zest

Boil your pasta as per the instructions on your package.

Saute your onions and garlic over medium heat in some olive oil.

Add in the tomato paste and spices once the onions and garlic are golden. Cook for 3-4 minutes and allow the flavours to come out from the spices.

Add in the whipping cream, vodka and pasta water. Allow it to simmer on low heat and thicken for about 8-10 minutes.

Taste test the sauce and ensure it tastes alright because I won't lie, I did wing the recipe as I always do but I was tipsy when I got to the sauce part LOL. But I think this is pretty close. If it needs more of something, add it in.

Add the butter in and mix. Toss in the parmesan, sundried tomatoes and some parsley. Mix and allow it to simmer for a few more minutes.

Add in the pasta and mix. Top off with ricotta and parsley. Enjoy!
