Chicken Cacciatore

Probably the BEST chicken dish I have ever made. Braised chicken, red wine and fresh tomatoes. Simply delicious!

Yields1 Serving
Chicken Marinade
 8 boneless chicken thighs
 ¼ cup green onions
 ¼ cup of italian parsley
 1 whole minced shallot
 1 tbsp grated ginger
 2 tbsp minced garlic
 2 tbsp paprika
 2 tbsp cumin powder
 1 tbsp pepper
 1 tbsp salt
 1 tbsp chili flakes
 olive oil (enough to marinade it nicely)
Rice
 basmati rice
 cumin seeds (jeera)
 salt
 pepper
 fenugreek (methi)
 green peas
 butter
Sauce Base
 ¼ cup olive oil
 ½ of a yellow onion, sliced
 2 tbsp minced garlic
 2 tbsp butter
 2 cups chicken stock
 1 cup red wine
 ½ cup fresh tomatoes (canned is fine as well)
 ¼ cup spinach (optional
 ¼ cup italian parsley
 ¼ cup grated parmesan
 1 tsp salt
 1 tsp pepper
 1 tbsp chili flakes
 1 tsp cumin
 1 tsp paprika
Rice
1

Add in all the ingredients and mix. I use a rice cooker but you can cook it on the stove in a pot as well. Follow instructions on your package. I used Basmati Rice!

I used 8 chicken thighs and marinaded everything in a bowl overnight for maximum flavour!

Make sure you take your chicken out of the fridge 30 minutes prior to cooking it.

I air fried half of the thighs for 8 minutes total on 400 degrees, flipping halfway in my Ninja air fryer. If you don't have an air fryer or want to use it, that is perfectly fine. You can just sear them all in your pan or pot! The ingredient list for the sauce base is for 8 thighs anyways, so don't worry.

I seared my chicken thighs in my dutch oven pot. You can use a deep skillet or pot, whichever works. Just make sure it is deep enough for the liquids to fit!

Sear your thighs in some olive oil over medium-high heat for 3-4 minutes on each side. Once cooked, remove from heat.

Now we are going to deglaze the pan and use all that good stuff stuck to the pan for the sauce! Turn the heat down to medium and just toss in half the butter, so 1 tbsp, the oil and the onions. Cook until the onions are brown.

Once the onions are brown, go ahead and add in the wine and half the chicken stock. Allow that to deglaze the pan and simmer for a few minutes or so. Add in the last tbsp of butter at this point as well as the tomatoes, half of the parsley and spices. You can see I added in green onions because I am obsessed with them and I add them to EVERYTHING lol but Chicken Cacciatore does not call for it. Feel free to add it in! Allow all of this to cook and come together for about 5 more minutes.

Spinach is optional! Add the stock in at this point and mix well.

Add the cooked chicken back into the pot and top it off with the rest of the parsley and the freshly grated parmesan. Cover and let it simmer on low heat for 5-7 minutes.

I can honestly say this is the best chicken dish I have EVER made! So many flavours and so delicious. I didn't realize I made Chicken Cacciatore until after. Chicken Cacciatore is a dish made with braised chicken, tomatoes and red wine. Incredibly delicious!
