Simple but so delicious. Cheesy goodness, who wouldn't love this dish?
Cook your noodles as directed on the box. Set aside to cool down.
Drain the frozen spinach of any water and place into a bowl. Add the rest of the ricotta spread ingredients into the bowl and mix well. Cover and set aside.
Heat the olive oil in a pan over medium high heat. Add in the onions. Saute until golden brown and then add in the garlic and all spices/seasonings. Saute for a few more minutes until fragrant. Add in the ground beef and cook for 4-5 minutes until fully cooked. Add in the tomato sauce and simmer on low heat for 3-4 minutes. Once cooked, allow it to cool down before getting ready to spread onto the noodles.
Preheat your oven to 350 degrees. Once the beef has cooled down, start by spreading the ricotta spread onto one noodle. Make sure the entire noodle is covered in the spread and then spread the beef mixture on top. Roll it up and place onto your baking dish or sheet. Ensure you have sprayed the dish or pan to avoid it from sticking!
Cover with the marinara sauce and then cheese. I like to cook my marinara sauce with onions, garlic and all the spices I used in the beef mixture. Then I would pour it over the roll ups and bake for 25 minutes. Broil it on high for 2 minutes on the top rack once they are finished baking. Once complete, add parsley to the top and enjoy!
